Looking good

All the fermenters are going strong this morning.

The 1214 never took off. I very much wanted to get good yeast into the fermenter to get things going so it didn't have a chance to go bad, so I called up the only LHBS in the area that was open on Sunday and carried Wyeast yeast. Wouldn't you know it, they were sold out of 1214.

Looking at my notes, I realized that of the seven ale yeasts, four were rated at 10% ABV or below, one at 11%, and two at 12%. This seemed to be a bit lopsided, so I decided to substitute 1762 - Belgian Ale II for the 1214. 1762 is rated at 12%, so it will put another batch in the "dry-er" column.

I pitched the 1762 last night, and this morning it's very much gaining momentum. Obvious, regular activity.

And now, we wait.

Here are the ABVs for the various yeasts:

4184 - 10% - Sweet Mead
4632 - 18% - Dry Mead
1056 - 11% - American Ale
1388 - 12% - Belgian Strong
1728 - 12% - Scottish Ale
1762 - 12% - Belgian Ale II
1968 - 9% - London ESB Ale
2565 - 10% - Kolsch
3056 - 10% - Bavarian Wheat Blend
