New batches

I thought I had posted on this already. Huh...

I started 2 batches at the same time, a traditional blend of clover and dark wildflower, and one of orange blossom. Both were started two weeks ago. The traditional is still fermenting and will end up with oak. The orange blossom was racked tonight onto 20lbs of oranges, flesh and zest (but no pith), cinnamon sticks and 4 vanilla beans. It smells WONDERFUL.

The bentonite experiment is still progressing. Fermentation is done, and it looks like the bentonite batch has an early lead on clearing, but just barely. More as it develops.
